creamy potato zucchini soup

chopped green onions are a frequent garnish in our Armenian Lebanese influenced kitchen. The shaved parmigiano is rare, but always welcome.

Paired with a nice bean laden salad for extra protein, with heirloom tomatoes from the local farmer's market spiked up in flavor with a little chopped red onion, and some French rose wine (not shown), a nice little meal for the three of us.
