Perhaps the most legendary risotto is risotto milanese. Here is our corrupted version. Subtract the shrimp and asparagus to get the authentic dish.

Look at these creamy kernels! Yellow and green, with a touch of pink.

A relatively unknown but terrific risotto is blueberry mushroom risotto. Look at that intense purple color.

You would think beets would also lend an intense red color shot to the rice but not when we tried it.
