slow cooker cheap beef

So we have this small old fashioned slow cooker hidden away in the extended closet under our staircase where we don't have stairs down to the basement that does not exist (in our townhome built on a concrete slab). Not sure who gifted it to us either. And we have only used it like three times so far in over a decade. This time Isgouhi brought some cheap beef from home for her weekend stay as her contribution to our food budget, accompanied by her slow cooker expertise.

Although bob is a wannabe vegan, he loves overcooked meat that falls apart. And the slow cooker is just the right kitchen appliance for achieving this end state. Served with Armenian rice and a salad, some Costco hummus on the side. Comfort food, with an international twist.

bob is clueless about meat prices. Maybe this beef is not so cheap, but anything beats going out to one of those steak houses. And home cooking makes practically any cut of meat cheap by comparison.

ingredients

2.5 lbs chuck roast
2 T butter, 2T oil
salt and pepper to taste
1/2 t allspice
1/4 t Aleppo red pepper
2 yellow onions, quartered
handful of whole garlic cloves (5-10)
1 T pepper paste
1 heaping T tomato paste
some mushrooms
some carrots
1 c red wine
1/2 lemon, juice of 

instructions

  1. Prep the veggies. 
  2. Brown the meat in a saucepan with the butter and oil.
  3. Throw it in the slow cooker with all the rest of the stuff and turn on.
  4. Cook on high 4-5 hours, then  a few more hours on low.
